BEEF
We keep Galloway cattle, a traditional hill breed, as a cross which is slower to mature but produces tremendous meat. We also have a herd of Highland cattle.
In the summer they roam the hill pastures. In the winter they eat silage, which we cut ourselves and is free of additives, or feed cake which comes from a Farm Assured supplier.
We hang our beef for three weeks for full flavour and texture. All the cutting and preparation is done here at Glenfernate, so everything we sell can be traced back to its origins.
